Man, that dish was a total flavor bomb! Didn't think to try this until now..

1. In a small bowl, mix together the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
2. Spread the cream cheese mixture evenly over half of each tortilla, leaving a small border around the edges.
3. Arrange the sliced strawberries on top of the cream cheese layer.
4. Fold the tortillas in half to cover the filling, pressing slightly to seal the edges.
5. Heat a large skillet over medium heat and add a bit of butter.
6. Once the butter is melted, place the filled tortillas in the skillet. Cook for about 2-3 minutes on each side, or until the tortillas are golden brown and crispy.
7. Remove from the skillet and sprinkle with a mixture of cinnamon and sugar while still hot.
8. Cut into wedges and serve warm.

To cater to different tastes, you can experiment with different fillings. Try using blueberries or raspberries instead of strawberries for a different twist.
