I served this dish for a potluck, and friends couldn't stop raving about it

4 slices of bacon, cooked and crumbled
1/4 cup fresh cilantro, roughly chopped
2 tablespoons fresh lime juice
1 tablespoon olive oil
1 teaspoon honey
Salt and pepper to taste
Directions
1. In a large mixing bowl, combine the diced avocados, corn kernels, halved cherry tomatoes, and crumbled bacon.
2. In a small bowl, whisk together the fresh lime juice, olive oil, honey, salt, and pepper.
3. Pour the dressing over the salad ingredients and gently toss to combine, being careful not to mash the avocados.
4. Sprinkle freshly chopped cilantro over the top of the salad.
5. Serve immediately and enjoy the flavors of summer!
Variations & Tips
For an extra kick, add some diced red onion or a finely chopped jalapeño to the salad. If you prefer a vegetarian option, simply omit the bacon and add a touch more salt to enhance the flavors. You can also use a mix of grilled and fresh
