Directions
1. Begin by blending the full-fat cottage cheese in a food processor or high-speed blender until smooth and creamy.
2. In a large mixing bowl, whisk together the heavy cream, erythritol, vanilla extract, and xanthan gum until well combined.
3. Gently fold the blended cottage cheese into the cream mixture and mix until thoroughly incorporated.
4. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes, until the mixture reaches a soft-serve consistency.
5. Transfer the ice cream to an airtight container and freeze for at least 2-3 hours before serving to allow the ice cream to firm up.
Variations & Tips
To add a fruity twist, fold in a 1/2 cup of pureed strawberries or raspberries into the ice cream mixture before churning. For a chocolate version, add 2 tablespoons of unsweetened cocoa powder to the mixture. If you're feeling adventurous, stir in a few drops of mint extract and mix in some chopped sugar-free chocolate for a mint chocolate chip variation. For a richer flavor, you could also experiment with different extracts like almond or coconut.
