2 pounds Italian sausage (mild or hot, depending on your preference)
4 bell peppers (a mix of colors), sliced
1 large onion, sliced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1/2 cup marinara sauce
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and black pepper to taste
Fresh basil, chopped (for garnish)
Directions
1. Place the sliced bell peppers and onions at the bottom of your slow cooker.
2. Layer the Italian sausage on top of the peppers and onions.
3. Add the minced garlic, diced tomatoes, and marinara sauce to the slow cooker.
4. Sprinkle the dried oregano, dried basil, salt, and black pepper over the ingredients.
5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the sausages are cooked through and the peppers are tender.
6. Once cooked, stir gently to combine all flavors. Serve hot, garnished with fresh chopped basil.

If you prefer a spicier kick, opt for hot Italian sausage and add a pinch of red pepper flakes. For a lower-fat version, you can use chicken sausage. Vegetarians can substitute the sausage with plant-based sausage or add more vegetables like zucchini and mushrooms. Using fire-roasted diced tomatoes can add a smoky depth to the flavor. Feel free to experiment with the herbs; fresh thyme or rosemary can bring a different aroma to the dish.
