1. Preheat your oven to 375 degrees Fahrenheit.
2. Carefully pit the dates by making a small slit on one side and removing the stone, ensuring the dates remain intact.
3. In a small bowl, mix together crumbled feta, grated Parmesan, chopped thyme, and black pepper.
4. Stuff each date with the cheese mixture, pressing the sides together gently to enclose the filling.
5. Arrange the stuffed dates on a baking sheet lined with parchment paper.
6. Drizzle the olive oil over the stuffed dates.
7. Roast in the preheated oven for about 10 minutes or until the dates are heated through and beginning to caramelize.
8. Serve warm directly from the oven.
Variations & Tips
For a unique twist, try adding chopped nuts such as walnuts or pecans to the filling for a crunchy texture. You can also experiment with different cheeses; goat cheese or blue cheese can offer a more intense flavor profile. If you enjoy a touch of spice, a small amount of finely chopped rosemary or red pepper flakes can add a nice warmth to the dish.
