1 teaspoon vanilla extract
1 cup rolled oats
1/4 cup chopped peanuts
1/4 cup mini chocolate chips
1 cup semi-sweet chocolate chips
1 tablespoon coconut oil
Directions
Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.
In a medium bowl, mash the bananas until smooth. Add the peanut butter, honey, and vanilla extract, mixing until well combined.
Stir in the rolled oats, chopped peanuts, and mini chocolate chips.
Pour the mixture into the prepared baking dish, spreading it out evenly.
In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until smooth and melted.
Pour the melted chocolate over the banana mixture in the baking dish, spreading it evenly. If you like, add more banana slices and chopped nuts on top.
Refrigerate for at least 2 hours or until firm.
Using the parchment overhang, lift the bars out of the baking dish and cut them into squares.
