1. In a large mixing bowl, combine the Dr Pepper, soy sauce, Worcestershire sauce, brown sugar, garlic powder, onion powder, and black pepper. Stir until the sugar is dissolved and the ingredients are well-mixed.
2. Add the thinly sliced beef and jalapenos to the marinade, ensuring all the meat is evenly coated. Cover the bowl and refrigerate for at least 6 hours, preferably overnight, to allow the flavors to meld.
3. Preheat your oven to 175°F (80°C) or set up your dehydrator according to the manufacturer's instructions.
4. Arrange the marinated beef slices in a single layer on baking trays lined with parchment paper or wire racks. If using a dehydrator, arrange the slices on the trays.
5. Bake in the preheated oven or dehydrate for 4-6 hours, or until the beef jerky is dry and firm but still slightly pliable. Rotate the trays occasionally for even drying.
6. Allow the jerky to cool completely before storing it in an airtight container. It can be kept at room temperature for up to two weeks, or in the refrigerator for longer storage.
Variations & Tips
For those who prefer a milder flavor, you can reduce or omit the jalapenos. If you like your jerky extra spicy, consider adding a teaspoon of crushed red pepper flakes to the marinade. For a smoky flavor, add 1-2 teaspoons of liquid smoke to the marinade. Different types of meat, such as venison or turkey, can also be used for a unique twist on this classic recipe.
