My hubby is on a low-carb diet, so this is one of my go-to dip recipes for him, esp on game days!

1. Preheat your oven to 350°F (175°C). This will help ensure that the dip is bubbly and golden on top when finished.
2. In a medium-sized bowl, combine the softened cream cheese, ranch dressing, and Buffalo wing sauce, stirring until you achieve a smooth and well-blended mixture.
3. Fold in the shredded chicken and mozzarella cheese, making sure the ingredients are evenly distributed throughout the dip.
4. Transfer the mixture into an 8-inch square baking dish, smoothing out the top with a spatula.
5. If using, sprinkle the crumbled blue cheese evenly over the surface of the dip.
6. Place the baking dish in the oven and bake for 20-25 minutes, or until the dip is heated through and the cheese is melted and slightly browned.
7. Remove from the oven and let it stand for a few minutes. Garnish with the chopped green onions just before serving.
Variations & Tips:
- Hot Sauce: For those that prefer a different level of spice, you can substitute the Buffalo wing sauce for a different hot sauce, adjusting the amount to your preference.
- Shredded Cheese: Feel free to experiment with different types of cheese, such as cheddar or gouda, to find the perfect combination for your palate.
- Serving Cold: If you're in a rush, this dip can also be served cold. Simply chill after mixing the ingredients together and skip the baking step, although warming it up does enhance the flavors.
- Slow Cooker Method: This Keto Buffalo Chicken Dip can be kept warm in a slow cooker set to low, making it perfect for gatherings where it will be out for an extended period.
