1. Lay out the low carb tortillas on a clean, flat surface. Spread a thin layer of pesto sauce over each tortilla, leaving a small border around the edges to prevent spillage.
2. Evenly distribute the shredded chicken breast on top of the pesto sauce.
3. Sprinkle the shredded mozzarella cheese, sun-dried tomatoes, and chopped spinach over the chicken. Season with a pinch of salt and pepper.
4. Carefully roll each tortilla tightly, starting from one end and working your way to the other, to create a wrapped cylinder.
5. Once rolled, slice each tortilla roll into 1-inch sections to create pinwheels. Secure with toothpicks if necessary.
6. Air fry at 400 degrees F for 7 mins or so. Serve!
Variations & Tips:
- If you have any picky eaters in the family, you can swap out ingredients based on their preferences. For example, you might want to use basil leaves instead of spinach, or try a different kind of cheese if mozzarella isn’t their favorite.
- For a little extra kick, mix a bit of crushed red pepper into the pesto sauce before spreading it on the tortillas.
- To keep it extra low carb, use homemade pesto made with fresh basil, pine nuts, parmesan cheese, garlic, and olive oil.
