Lemon cream ready in 10-15 minutes – It is prepared with 2 lemons, 2 eggs, 40 g butter, 100 g sugar and vanilla

Grate the lemons with a fine grater and squeeze out the juice. Mix the lemon juice with the sugar until the sugar is completely dissolved.

Separately beat the eggs with a whisk, then add the lemon juice and the sugar mixture. We also mix in the grated lemon peel.

We put the mixture in a saucepan. Add the butter and cook the cream, stirring constantly, until it thickens.

Strain through a sieve and pour into the glasses.

It is a delicate cream with a fresh taste and can be served with pancakes or used as a filling for croissants, cakes, tarts and profiteroles.
