2. In a separate bowl, mix the lemon pudding mix with the Cool Whip until well combined and creamy.
3. Gently fold the fruit mixture into the Cool Whip mixture, ensuring all the fruit is evenly coated.
4. Add the lemon and orange zest to the mixture and gently stir to incorporate.
5. Transfer the mixture to a freezer-safe dish and spread it out evenly.
6. Cover the dish with plastic wrap or an airtight lid and place it in the freezer for at least 4 hours or until firm.
7. Before serving, let the fruit salad sit at room temperature for about 10 minutes to soften slightly. Serve in bowls or scoop out portions with an ice cream scoop.
Variations & Tips
For a tropical twist, add 1 cup of diced mango or papaya to the fruit mixture. If you're looking to reduce the sugar content, opt for sugar-free pudding mix and light Cool Whip. To make this dish dairy-free, use a coconut or almond-based whipped topping. You can also experiment with different fruit combinations based on what's in season or your personal preferences. For added crunch, sprinkle some toasted coconut flakes or chopped nuts on top just before serving.
