Garlic potato patties filled with melted cheese

Instructions:
Cook the potato cubes in lightly salted water until tender. Drain and allow to cool.
Place the cooled potatoes in a bowl and mash with a fork or potato masher.
Add the chopped garlic, egg, breadcrumbs, salt and pepper and mix well until evenly distributed.
Take a small amount of the potato mixture in the palm of your hand and flatten. Place a piece of processed cheese in the center of each flatbread. Fold the potato mixture over the top and form into a ball, leaving the processed cheese in the center. Make sure the processed cheese is completely covered by the potato mixture.
Lightly dust the stuffed potato balls with flour to cover them.
Heat some oil in a pan. Add the potato balls to the pan and fry over medium heat until golden brown on all sides, until cooked through and the melted cheese has melted.
Drain the garlic potato patties on kitchen paper to remove excess oil.
Serve the patties warm with a dip of your choice, or just as they are!
