1 tablespoon olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Directions
1. Begin by seasoning the pork loin generously with salt, pepper, dried thyme, and dried rosemary.
2. In a large skillet, heat the olive oil over medium-high heat. Add the pork loin and sear on all sides until golden brown, about 4-5 minutes per side.
3. Once seared, transfer the pork loin to the slow cooker.
4. In the same skillet, add the bacon slices and cook until crispy. Remove the bacon and set aside on a paper towel to drain.
5. In the bacon drippings, sauté the minced garlic and sliced onion until fragrant and translucent, about 2-3 minutes.
6. Add the garlic and onion mixture to the slow cooker, along with the chicken broth.
7. Crumble the cooked bacon over the top of the pork loin.
8. Cover and cook on low for 6-8 hours, or until the pork is tender and easily shredded with a fork.
9. Once done, remove the pork loin from the slow cooker and let it rest for a few minutes before slicing.
Variations & Tips
For a twist, you can incorporate some apple slices or a splash of apple cider into the slow cooker for a slightly sweet note. If you prefer a bit of heat, consider adding a teaspoon of red pepper flakes or a chopped jalapeño to the bacon and onion mixture. Additionally, freshly chopped herbs like parsley or basil can be sprinkled on top just before serving for a burst of freshness.
