Directions
1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
2. In a small bowl, combine the honey, soy sauce, olive oil, minced garlic, ground ginger, red pepper flakes (if using), salt, and pepper. Mix well until the honey is fully dissolved.
3. Place the salmon fillets on the prepared baking sheet. Brush each fillet generously with the honey mixture, ensuring they are well coated.
4. Evenly distribute the pineapple chunks over and around the salmon fillets on the baking sheet.
5. Bake in the preheated oven for about 15-20 minutes, or until the salmon flakes easily with a fork and is cooked through.
6. Optional: For a beautiful, caramelized finish, you can broil the salmon for an additional 2-3 minutes. Watch carefully to prevent burning.
7. Remove the salmon from the oven and let it rest for a few minutes before serving.
8. Garnish with chopped fresh cilantro, if desired, and serve with lime wedges on the side.
Variations & Tips
For a different twist, you can substitute the pineapple with mango or even peach slices. If you have picky eaters, you might want to serve the pineapple on the side instead of on top of the salmon to give them the option. For those who enjoy a bit of heat, adding a teaspoon of sriracha or a sprinkle of chili powder to the honey mixture can give the salmon an extra kick. If fresh pineapple is not available, canned pineapple chunks (drained well) work just as well.
