2 cups cooked chicken breast, shredded
1 ripe avocado, diced
1/4 cup Greek yogurt
2 tablespoons cilantro, chopped
1 lime, juiced
1/2 teaspoon garlic powder
Salt and pepper to taste
8 large lettuce leaves, preferably Bibb or butter lettuce
Directions
1. In a medium-sized bowl, mix together the shredded chicken, diced avocado, Greek yogurt, chopped cilantro, lime juice, and garlic powder.
2. Season the mixture with salt and pepper to taste, ensuring everything is well combined.
3. Carefully rinse the lettuce leaves and pat them dry with a paper towel to remove excess moisture.
4. Spoon an even amount of the chicken and avocado mixture into the center of each lettuce leaf.
5. Serve immediately, or cover and refrigerate until ready to eat.
Variations & Tips
For a spicy kick, add a dash of chili flakes or a spoonful of salsa to the chicken mixture. If you're not a fan of cilantro, try substituting it with fresh dill or parsley. For those who aren’t on a strict low-carb diet, adding a small amount of chopped mango or pineapple gives these wraps a sweet and tropical twist. And lastly, if you're dairy-free, you can easily swap the Greek yogurt for a dairy-free yogurt or a bit of mashed avocado to keep the creamy texture.
