Refreshing no-bake strawberry curd cake

1. Prepare the base:
Place the cookies in a sealable bag and crush them with a rolling pin until fine crumbs are formed.
Add melted butter and mix well until cookie crumbs are evenly coated with butter.
Press the biscuit-butter mixture into a springform pan lined with baking paper and spread it evenly to form a firm base.
Let the base set in the refrigerator for about 30 minutes.
2. Make the curd filling:
Prepare the gelatine according to the package instructions and let it swell.
Mix low-fat quark, cream cheese, powdered sugar and the juice of a lime or lemon in a bowl.
Warm the swelling gelatine slightly and add it to the quark mixture, stirring constantly.
Beat the cream until stiff and carefully fold it into the quark mixture until a fluffy filling is formed.
3. Assembling the cake:
Spread the quark filling evenly on the prepared biscuit base.
Let the cake set in the refrigerator for at least 3 hours so that the curd filling reaches its consistency.
4. Prepare strawberry layer:
Wash, clean and halve or slice the fresh strawberries.
Heat the strawberry jam slightly in a small saucepan until it becomes liquid.
Spread the liquid strawberry jam evenly over the curd filling.
Arrange the prepared strawberries on the jam layer.
5. Decorate:
Prepare the cake icing according to package instructions and pour over the strawberry layer to create a shiny coating.
Decorate the refreshing strawberry curd cake with fresh mint and additional strawberries as desired.
6. Serve:
Carefully remove the cake from the springform pan and place it on a serving platter.
Cut into portion-sized pieces and serve immediately.
Tips and Variations:
Crust Variation: Experiment with different types of cookies for the crust, such as whole wheat cookies, oat cookies, or chocolate chip cookies, to get different flavors.
Quark filling with flavors: Give the curd filling additional flavor by adding vanilla sugar, orange zest or a pinch of cinnamon.
Fruity variation: Instead of strawberries, you can also use other berries such as raspberries, blueberries or mixed berries to give the cake a fruity variety.
