Ingredients: 4 large potatoes, peeled and diced, 1 large onion, finely chopped, 2 eggs, 1/2 cup wheat flour, 1 teaspoon baking powder, salt and pepper to taste, vegetable oil for frying.
Preparation:
Boil the potatoes in salted water until tender. Drain well and place in a large bowl. Add the chopped onion to the potatoes and mash with a fork or potato masher until a coarse puree forms. Add eggs, flour, baking powder, salt and pepper to the mashed potatoes and mix well. Heat enough vegetable oil in a large skillet over medium-high heat. Spoon portions of the potato mixture and form into golf ball-sized balls with your hands. Carefully place the potato balls in the hot oil and fry until golden brown and crispy on the outside, about 3-4 minutes on each side. Remove the potato pancakes from the oil with a slotted spoon and place on paper towels to drain off excess fat. Serve the hot potato pancakes as a side dish or as an appetizer and enjoy!
