2 cups fresh blackberries
1 cup granulated sugar
1 tablespoon lemon juice
1 1/2 cups water
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 tablespoons butter, melted
Directions
In a large, deep skillet over medium heat, combine blackberries, sugar, lemon juice, and water. Stir gently and bring to a low boil.
In a mixing bowl, sift together flour, baking powder, and salt. Add milk and melted butter, and stir to form a smooth batter.
Once the blackberry mixture is boiling, drop spoonfuls of the batter into the skillet, spacing them evenly. Cover the skillet with a lid and let simmer for 15 minutes, or until the dumplings are cooked through and puffed up.
Carefully remove the lid (watch out for steam), and check if dumplings are done by inserting a toothpick into one of them. It should come out clean.
Serve hot directly from the skillet, ensuring each serving gets a generous amount of both dumplings and blackberry sauce.
Variations & Tips
For those with dietary restrictions, you can easily substitute the all-purpose flour with a gluten-free blend and use almond milk instead of regular milk. If you prefer a little less sweetness, reduce the sugar to 3/4 cup and consider adding a pinch of cinnamon or vanilla extract to the batter for a different flavor twist. For families with kids who like their desserts extra sweet, consider serving it with a scoop of ice cream on top or a drizzle of caramel sauce.
