1 lb boneless, skinless chicken breasts
1 medium onion, finely chopped
2 cloves garlic, minced
1 can (10.5 oz) condensed cream of chicken soup
1 cup sour cream
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 bag (11 oz) of Nacho Cheese Doritos, lightly crushed
1 can (4 oz) diced green chilies (optional)
1/2 teaspoon chili powder
Salt and pepper to taste
Directions
1. Place the chicken in the slow cooker.
2. Top with chopped onion and minced garlic.
3. In a medium bowl, mix the condensed soup, sour cream, half of the shredded cheeses, green chilies if using, chili powder, salt, and pepper. Spread this mixture over the chicken.
4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through.
5. Shred the chicken in the slow cooker using two forks.
6. Add the lightly crushed Doritos into the slow cooker, reserving some for topping. Stir to combine everything.
7. Sprinkle the remaining cheese and reserved Doritos on top.
8. Cover and cook for an additional 30 minutes or until the cheese is melted and bubbly.
Variations & Tips
If you want to add a bit more zest, toss in a tablespoon of taco seasoning with the cream mixture. For a lighter version, substitute plain Greek yogurt for the sour cream and use reduced-fat cheeses. You can also add a variety of toppings before serving like sliced jalapeños, a dollop of guacamole, or some fresh cilantro to enhance the flavors.
