6 bratwurst sausages
1 large onion, sliced
2 apples, cored and sliced (preferably tart, like Granny Smith)
12 oz. beer (a lager or ale works well)
1 tablespoon mustard seeds
2 teaspoons apple cider vinegar
1 teaspoon black pepper
1 teaspoon salt
6 brat buns, optional for serving
Directions
1. Place the sliced onions and apples at the bottom of the slow cooker.
2. Lay the bratwurst sausages on top of the onion and apple slices.
3. Sprinkle mustard seeds, salt, and pepper over the sausages.
4. Pour the beer and apple cider vinegar over everything.
5. Set the slow cooker to low and cook for 6-7 hours or on high for 3-4 hours, until the brats are fully cooked and the flavors meld together beautifully.
6. Serve the brats on buns if desired, topped with the onions and apples from the cooker, and your choice of condiments.

For a non-alcoholic version, you can replace the beer with a non-alcoholic beer or a rich, dark apple cider for a different depth of flavor. If you want a spicier kick, add a few dashes of hot sauce or some red pepper flakes into the slow cooker before cooking.
