Ingredients:
4 corn cobs, with the husks removed
2 tablespoons of olive oil
4 tablespoons of mayo
1/3 cup of sour cream or Mexican crema
1 and 1/2 teaspoons of smoked paprika
1 and 1/2 teaspoons of Cajun seasoning
1 teaspoon each of garlic and onion powder
1 tablespoon of lime juice
1/2 cup of cotija cheese or crumbled feta
1 teaspoon of chipotle or chili powder (optional)
1 tablespoon of finely chopped cilantro
Salt and pepper to taste
Instructions:
1. Mix olive oil, half of the paprika, half of Cajun seasoning, garlic powder, onion powder, salt, and pepper in a small bowl.
2. Brush the corn generously with the mixture, and wrap in foil.
3. Bake at 425°F (218°C) for 30 minutes. For softer corn, bake for an additional 20-25 minutes after brushing with more oil mixture.
4. While the corn bakes, prepare the mayo sauce by mixing mayo, sour cream, remaining Cajun and paprika, lime juice, salt, and pepper.
5. Once baked, optionally brush the corn with leftover oil mixture, then coat with mayo sauce. For a charred effect, use a grill pan briefly.
Top with feta or cotija cheese, cilantro, and more Cajun spice. Serve warm.
