A continuation of the step-by-step image series showing the final stages of preparation for Vegan Halloumi with avocado mash and toast. First image: Pouring the blended tofu mixture with agar-agar into a mould and setting it in the fridge. Second image: Slicing the set vegan halloumi and grilling it in a non-stick pan until golden brown on each side. Third image: Toasting sourdough slices until golden. Fourth image: Mashing avocados with lemon juice, salt, pepper, chilli flakes, and chives. Fifth image: Spreading the avocado mash onto the toasted sourdough and topping with grilled vegan halloumi, garnished with chives and chilli flakes. Sixth image: The final presentation of the dish, ready to be served.
1. Begin with the vegan halloumi: blend the tofu, nutritional yeast, lemon juice, salt, and olive oil until smooth. Transfer to a saucepan, add the agar-agar, and heat until the mixture thickens.
2. Pour into a mould and set in the fridge for 1-2 hours until firm.
3. Once set, slice the vegan halloumi and grill in a non-stick pan with a bit of oil until golden brown on each side.
4. Toast the sourdough slices until golden.
5. For the avocado mash, combine the avocado flesh with lemon juice, salt, and pepper. Stir in half the chilli flakes and chives.
6. Spread the avocado mash onto the toasted sourdough, then top with the grilled vegan halloumi.
7. Garnish with the remaining chives and chilli flakes.
8. Serve immediately, and enjoy the layered flavours and textures.
