Fried potatoes with egg and cheese: A classic of German cuisine

First wash and peel the potatoes thoroughly. Then cut into slices about 1 cm thick.
Heat the butter or oil in a large pan. Add the chopped onion and garlic and sauté until translucent.
Add the potato slices to the pan and fry over medium heat until golden brown. Turn occasionally so that they become evenly crispy on all sides.
While the potatoes are frying, whisk the eggs in a bowl and season with salt and pepper.
Once the potatoes are crispy and cooked through, pour the beaten eggs over the potatoes. Reduce the heat and carefully let the eggs set in the pan. Stir occasionally so that the egg is evenly distributed.
As soon as the egg has set, sprinkle the grated cheese over the fried potatoes and remove the pan from the heat. Let the cheese melt.
Divide the fried potatoes with egg and cheese on plates and garnish with fresh parsley if desired.
This dish is ideal as a hearty breakfast, quick lunch or rustic dinner. It can also be varied wonderfully, for example by adding bacon or ham or using different types of cheese. Serve the fried potatoes with a crisp green salad and enjoy the unique taste of this delicious dish. Bon appetit!
