Finally found the low carb version of my favorite appetizer!

- 1 pound ground pork (or chicken if you prefer a lighter option)
- 2 cups of cabbage, thinly sliced
- 1 medium carrot, peeled and julienned (omit if you're strict keto)
- 2 cloves of garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce or coconut aminos for a gluten-free option
- 1 teaspoon sesame oil
- 1 teaspoon apple cider vinegar
- Salt and pepper, to taste
- 8 large egg whites
- Cooking spray or olive oil for frying
Directions:
1. Start by cooking your meat in a large skillet over medium-high heat until it's nicely browned and crumbly. If you're anything like me and your schedule is packed, feel free to use those pre-cooked options or leftovers – they're a real timesaver!
2. Toss in the cabbage, carrots, garlic, and ginger, and stir-fry until they're tender and fragrant. Sprinkle in some chit-chat here – cooking should always be fun!
3. Add the soy sauce or coconut aminos, sesame oil, and apple cider vinegar to the mix, giving it a good stir to ensure everything is well-coated and fabulous.
4. Season with salt and pepper, and cook for an additional minute before removing it from the heat – nobody likes overcooked veggies.
5. Now, take your egg whites – they're our low-carb wrappers – and whisk them in a bowl. Heat a non-stick skillet sprayed with oil over medium heat and pour in enough egg white to create a thin layer, almost like a crepe.
6. Once the edges start to pull away, place a spoonful of the filling on one side and roll it up tightly. Cook for an extra minute to seal the deal.
7. Repeat with the remaining egg whites and filling, placing your beautiful keto egg rolls on a paper towel-lined plate.
Variations & Tips:
- Spice it up! Add some chili flakes or hot sauce to your filling for that extra kick.
- Vegan friends, don't worry, you can totally use crumbled tofu instead of meat and skip the egg white wrappers by using lettuce leaves for an uber-healthy wrap.
- Make a big batch on Sunday, then reheat for a quick snack or meal throughout the week because we all know that meal prep is a lifesaver.
- For a crispy finish, pop them in an air fryer for a few minutes before serving. Just because we're keto doesn't mean we have to miss out on that crunch we all love so much.
