Shred the aged cheddar and smoked Gouda cheese and combine in a large mixing bowl.
Add cream cheese and mayonnaise to the bowl. Mix everything together until well combined. Evenly distribute the chopped roasted red peppers by adding them to the mixture and stirring.
Add the dry mustard and onion powder. If desired, a pinch of cayenne pepper provides warmth. Combine all ingredients and stir until well blended. (Alternatively, you can use an electric mixer.)
To make the dip milder, simply add some dry parsley and stir. You can also skip this step if you want.
After the dip is well mixed, seal the bowl or place it in a container to prevent it from drying out. Put it in the fridge for at least an hour, preferably all night, to allow the flavors to combine.
To ensure the dip is properly mixed before serving, give it a quick stir. If desired, you can add additional chopped roasted red pepper or parsley as a garnish.
