Directions:
Prepare the base: Mix the graham cracker crumbs, brown sugar and cinnamon. Mix in the melted butter, press into a mold and bake for 10 minutes.
Cinnamon Roll Swirl: Mix brown sugar, flour and cinnamon with melted butter. Put aside.
Cheesecake Filling: Cream cream cheese until creamy, then add sugar and sour cream. Beat in eggs one at a time, followed by vanilla and salt. Layer the dough and cinnamon roll swirls in the mold.
Bake: Bake at 325°F (approx. 163°C) in a water bath for 60-75 minutes.
Cooling: Allow to cool in the turned off oven for 1 hour, then refrigerate for at least 6 hours.
Glaze: Beat cream cheese and powdered sugar, fold in whipped cream and pipe onto the cheesecake.
Sprinkle with cinnamon.
